You have to set the machine to its thickest setting and roll the dough out by pulling it through the device at least three times - if you have a manual design then you have got to crank a handle to achieve this; an electric or automatic unit will do all the hard work for you. Afterward you adjust the machine once more, selecting the next lowest thickness setting, and pass the pasta dough through three times more. The action is repeated until you end up with a sheet of thin, smooth pasta. After this, you need to cut the sheet to the required length. At this moment the next function of the pasta maker machine comes into play. All the machines have a cutting function to cut the pasta dough into strips. Merely decide on the size you need and put the sheets through the pasta cutter. That's it! Just leave the completed pasta for an hour or so to dry - a pasta drying rack would help with this bit - and it's ready to cook.
